Egg Shakshuka
Sometimes the best creative ideas come from the laziest mind and a hungry stomach. No prep for dinner led me to think of a quick egg dinner cos ofcourse I was feeling lazy and was in no mood of making something elaborate like daal Sabzi. My husband suggested egg Bhurji but didn’t excite me, I thought of egg curry rice n I was bored again. And then I remembered this amazing dish I ate at a brekkie place in Bangalore and ofcourse my husbands recent visit to Israel and his food tales. Shakshukaaaa!! It’s definitely fit for any meal of the day I feel. Must try it at home if u want to make a fancy egg breakfast, lunch or dinner

So here goes
What would you need for Shakshuka for 2 people?
- Olive Oil
- 1 large onion, chopped
- 1 capsicum , chopped
- 8 garlic cloves, peeled, chopped
- 1 tsp ground coriander powder
- 1/2 tsp ground cumin
- Pinch red pepper flakes (optional)
- Salt and pepper
- 4 ripe tomatoes, chopped
- 1/2 cup tomato sauce or Pasta/pizza sauce
- 4 large eggs
- 1/4 cup chopped fresh coriander leaves
- One spoon fresh mint leaves chopped or dry mint powder
What you need to do?
- Heat 2 tbsp olive oil in a large cast iron skillet. Add the onions, capsicum, garlic, spices, pinch salt and pepper. Cook, stirring frequently, until the vegetables have softened, about 5 minutes.
- Add the tomatoes, tomato sauce or pasta sauce, and sugar(optional). Simmer until the tomato mixture begins to reduce, about 10-12 minutes. Taste and adjust the seasoning to your liking. Add 1/2 cup of water if the mixture becomes to dry. Get it to a thick consistency.
- Using a wooden spoon, make 4 indentations, or “wells,” in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each indention.
- Reduce the heat, cover the skillet, and cook on low until the egg whites are set.(you can modify your cook depending on how you like the yoke. I made mine cooked well- for about 7 minutes)
- Uncover and add the fresh coriander and mint. You can add more black pepper or crushed red pepper, if you like. Serve with warm pita or your choice of crusty bread.
