Egg Bun Keshto

Egg bun Keshto! What's that? Hearing that name for the first time. Have only heard of an actor called Keshto Mukherjee in old movies.. 😜

Egg Bun Keshto is a specialty from my graduation school in Manipal. Its a desi and tangy version of EggMcMuffin. A simple yet delicious breakfast for one or 2 people, it gives me a break from the usual egg breakfasts like omelette, Bhurji or scrambled.
 4 yrs of enjoying this in college, but forgetting about it for 7 yrs I rediscovered it when I went back to manipal just to revisit the good ol days. This is my adaptation and tribute to the lovely desi egg burger 



So for 1 egg Keshto,

What goes in?

  1. Burger Bun or Tea bun
  2. One egg
  3. 1/2 medium onion chopped (or less)
  4. 1/2 small tomato chopped (or less)
  5. Lemon
  6. Fresh Coriander leaf for garnish
  7. Salt, pepper and red chilli powder
  8. Grated cheese (optional)

What do you have to do?
  1. Slice the burger bun in two halves
  2. In a fry pan, put little oil and break open the egg.
  3. Cook the yellow to you desired state, add very little salt an pepper
  4. Toast the bun with little oil and make it slightly crispy.
  5. Put the fried/half fried egg in between the burger slices
  6.  Add the chopped onion and tomatoes on top of it, sprinkle salt and chilli powder on top and squeeze 1/4th of a lime
  7. Top it off with chopped coriander
  8. If you like cheese with eggs you can put some grated cheese on top before closing with the other half of the bun.( I prefer it without cheese as then it maintain its true tangy taste)
And there you go..

A tangy desi egg burger which is tasty and keeps your boredom away from egg breakfasts.
