Cauliflower soup
Alright, so I have decided to have a healthy dinner as many times in a week as possible. Salads, soups, roasted chicken , veggies and the likes. I love to experiment different kind of soups based on what’s in my refrigerator. I saw this big headed gobi ( cauliflower) waiting to be cooked from a few days and thought if we can make roasted cauliflower, cauliflower pizza , cauliflower fried rice.. we sure can make cauliflower soup. I searched for some recipes and like the sound of a creamy cauliflower soup. Without cream ofcourse. But it does have some cheese .its so Simple that you might wanna Cook this over n over again.


What do you need?
- Half of a big cauliflower head, florets removed
- 2 small carrots - chopped , shredded however you want it ( I did chopped)
- Vegetable broth or broth maker ( Maggi broth or knor broth are available in the market, I used my homemade broth 500 ml )
- Salt, pepper and bay leaf
- 2 spoon butter
- 2 cups milk
- 3 spoon all purpose flour
- 2 spoons of grated Cheddar cheese
- 2 cups water
What you need to do ?
- In a big pot, add water,cauliflower, carrots , broth maker, bay leaf, some salt and pepper. Bring it to boil and then simmer this for 15 to 20 mins
- Mix 1 cup milk with 3 spoons all purpose flour
- In a separate pan , heat butter add some salt and pepper and add remaining 1 cup milk.
- Slowly add the mix from step 2 to the pan , constantly stirring to make a white thick sauce( like bechamel sauce). And bring the mix to a slow boil on medium heat. Fold in the cheddar cheese and switch of the gas
- Add this white sauce to the big pot with our veggies and cook for 5 minutes
And you have a creamy, thick and scrumptious soup READY TO SLURRRP ON . I had my soup with some quick stir fried beans
