Spicy pumpkin soup
So in my effort to become a soup nazi a term made famous by the hit sitcom “Seinfeld” and ofcourse eating healthy I discovered hat my mother in law makes really tasty Pumpking soup. I had gone to her home and she gave a small glass of left over soup from previous night. It was so tasty that I couldn’t believe she had only that small glass of soup left. Ofcourse I asked her to make again for me and again and again . This is her recipe and I love it for its simplicity.

What do you need
- 300 gm of orange pumpkin - peeled and chopped into 1.5 inch pieces
- 2 medium size onion - sliced
- 10 bulbs of garlic - chopped
- Olive oil or refined oil
- 1 bayleaf
- 1 cinnamon stick
- Seeds of 3 green or small cardamamom
- 2 spicy green chillies
- Pepper and salt
- 4 cups Water and 1 cup milk
- Hand blender
What you need to do
- In a pressure cooker, heat oil and add bay leaf, cinnamon and green cardamom seeds
- After 30 seconds add garlic and onion, cook till they are cooked and slightly brown
- Add pumpkin and Cook for 15 mins stirring incessantly till pumpking is cooked and brown owing to the caramelisation.
- Add 2 cups of water, salt and pepper as per your taste and let the pumpkins simmer for 5 mins
- Add 2 cups and give 1 whistle to the cooker
- Open the cooker and removed he bay leaf and cinnamon before you blend the soup with the hand blender. ( if you are using mixie blender please make sure you strain it through a sieve)
- Pumpkin soup is usually better thick consistency but you can add water as per you likeness
- At the end add the 1 cup of milk to the hot soup to give it some more body
Since I am on keto diet I had my pumpkin soup with cauliflower mash and some sautéed red capsicum
