Veggie Pan pasta

I personally love pasta. Who doesn’t. Even our Indian parents love to eat pasta. I think pasta has replaced the mind space in which earlier veg noodles, chicken chowmein or desi Chinese used to be. And the good part is, its healthy with veggies, no ajinomoto and not oily.
Sometimes it’s fun to cook pasta with proper sauces. Bechamel sauce( white sauce) , arabiatta( red sauce) or a mix of both. But for a regular meal one doesn’t want to put too much effort to make sauce in one, veggies in another and mix the both.
 There is a large range of ready to cook pastas available in the market with tastemaker and even pasta sauces. Believe you me they come no where close to a home cooked pasta with a homely taste maker and lots of veggies. 
So here is a pasta recipe which is quite basic, Indian and would not go unnoticed if your spouse, partner or friends eat. Pasta for 2



What do you need?

  1. Onion (medium size) -2
  2. Tomatoes - 2
  3. Capsicum - 1 or Red/Yellow Bell pepper - 1
  4. Garlic - 6 cloves
  5. Mushroom, Broccoli(if you happen to have it at home)
  6. Pasta of your choice. For this simple recipe I like Macaroni or Penne
  7. 1 table spoon Ketchup and 1/2 tea spoon Soy sauce
  8. Pepper, oregano and Red chilli powder
  9. 2 cubes of Amul Cheese grated

What should you do?

  1. Chop garlic into small pieces
  2. Cut onions, tomatoes and Capsicum in cube pieces
  3. In another dish boil water with some 1 tbsp salt  and oil in it 
  4. On boiling add the pasta and boil it till it is almost cooked. Rest will get cooked when you mix it with the veggies
  5. In a pan, heat olive oil or refine oil
  6. Chuck in the garlic and onions, fry till they become slightly transparent
  7. Add the capsicum and fry for 1 minute, Add the tomatoes and cook for 4 to 5 mins till all veggies are cooked (you can also add Mushroom before tomatoes)
  8. Add mushrooms to the veggies and wait for the water to dry. Add blanched Broccoli and Cook for a minute
  9. Add ketchup, soy sauce, salt, pepper, chilli powder and oregano
  10. Add the pasta and cook for 2 mins. Switch off the gas.
  11. Fold in the grated cheese and cover the pasta for cheese to melt.
  12. SERVE

What do you get?
A mouth watering pasta which feels so healthy. Not too heavy not too light on the stomach. Make a little extra for a second meal. Old pasta tastes even better (cold or hot alike). Have it with a toast or Chilli garlic cheese toast whose recipe I shared in a previous post.
