Focaccia bread with Wheat
Love love love bread. Bread of any kind, any size , any flavour. One bread I love is FOCACCIA. Italians have got their bread game pretty strong .. from pizza bread to garlic to focaccia. This bread pairs particularly well with soups making a not so exciting soup dinner, very exciting ! This can be made with maida or wheat but I chose the healthy wheat option.

Either drizzle some olive oil at the end or put some butter on top of the bread when serving.

What do you need ?
- 10 gm instant yeast Or approx 1 teaspoon yeast
- 3/4th tea spoon sugar ( if you are not entirely sure what’s a tea spoon like me 😁 here is an image that will help u understand - all kind of spoons )
- 1/2 tea spoon salt
- 1/2 cup warm water for yeast cultivation ( not hot , not lukewarm.. WARM)
- 4 cups wheat Or maida
- Salt to taste ( I used 1/2 teaspoon), Sugar to taste (another half spoon )
- 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda Or flavourless ENO powder
- Dried basil or fresh basil
- Dried oregano or fresh oregano
- Olive oil
- 2 cups Water to knead
- Sliced olives
- Sliced onions (optional)
- Zatar spice (just to add a little twist of taste to the focaccia bread! )
How to make it ?
- In the warm water add the sugar, salt (ingredients 2 & 3) and mix. Add the yeast and let it rest for 10 minutes and bubble
- Meanwhile mix wheat, salt to taste, sugar to taste oregano, basil , baking powder & soda.
- Add the yeast mix after 10 mins of resting.
- Knead the dough with water. Make sure your dough is smooth and light .. and it all comes together in one lump
- Knock out all the air from dough by kneading it thoroughly. Drizzle some olive oil. Let the dough rest for 1.5 hours by covering it with another container
- Re-knock out all the air from the dough by kneading it again and drizzle some olive oil
- At this stage preheat the oven for 15 mins at 180 degrees. This gives time to leave your dough after re-knocking the air out
- Spread the dough evenly 1/2 an inch height on a butter paper in any shape you want. Add olives , onions , Zatar spice whatever you feel like on top of the bread. (You can add some other veggies like Eggplant or bell peppers to make it more veggie)
- Bake the bread for 25 mins at 180 degrees
How to serve this bread?
I love coupling this with soup ( with drumstick soup in the picture below and some garlic butter). You could also serve it with a dip or PESTO at a party.
