Cream of Mushroom Soup (without cream)
I love to Cook and eat freshly made cream of mushroom soup. It's Delish, healthy when made without cream and feels fancy too! Making this doesn't take a lot of time and you usually have enough for another meal if you having it alone. So pack it and take it to your office and it will make for a healthy lunch and of course you can show off your cooking skills to your colleagues.
I don't like to churn this soup in a blender because it's a lot of effort and takes away the ease of cooking the soup. Let just say I like my soups with pulp. 😁. If you cooking this for dinner I would recommend having some crunchy toast with it and that's all you need.
So here goes the recipe
What goes in?
- 1 standard bag of button mushrooms
- 2 medium size onions and 15 garlic cloves
- 2 spoons olive oil
- Milk - 1.5 cups
- Vegetable or chicken broth 300 ml
- Salt and pepper
- 4 tablespoons wheat flour (aata)
- 2 bay leaves
- Oregano or pizza seasoning
- Dry rosemary
- Thyme (optional)
How do you make it?
- Cut half a pack of mushroom into very small pieces. Cut the other half into big chunkier pieces which will be visible in your soup
- Chop the onion and garlic into fine small pieces
- Add oil and bayleaves in a deep pan and fry it for 30 seconds
- Add garlic (fry for a minute) and add onions. Cook them till onions become soft and transparent
- Add all the mushrooms, salt and pepper to taste
- Cook for 5 mins and wait till most of the water has dried up
- Add wheat flour and ensure that mushrooms, onions and garlic are coated with the flour. Cook for 2 mins.
- Add the stock and bring to boil. Add salt, pepper and the seasoning
- Continue cooking for 10 mins till it gets slightly thick consistency
- Add the milk. Cook for 2 minutes and switch off
- Add more salt and pepper according to your taste

What do you get:
A hot and steaming bowl of healthy cream of mushroom soup. Have it alone or accompany with toast or garlic bread and your dinner is done. And of course store the leftover soup for another meal. 💁
