Chicken bake with Veggies and Pepper sauce

What ingredients you need?
Call it whatever you want, but this dish works so well for a laid back relaxed Sunday lunch. This recipe was actually cooked by my husband and our very close friend. It was inspired by a dish I had made a few weeks back but with some awesome and simple tweaks and inventions. On a Sunday, after a long night this is the kind of meal you look for. Especially when it’s cooked by your loved ones. If you are a vegetarian replace the chicken with Paneer or add more veggies.
What ingredients you need?
- 1kg Chicken cut in medium or large pieces
- Olive oil
- Rosemary
- Garlic - 1Bulb
- Cashew and Almonds - crushed
- Any veggies that you may have. In this meal we put carrots, beans, tomatoes, mushroom, peas and onions
- Salt and pepper and oregano
- Lemon
- Parsley or coriander
What you need to do?
- Cut all veggies into big pieces
- Peel the garlic and crush it into big pieces
- Crush the nuts into smaller pieces by wrapping in a cloth and beating it with a rolling pin
- Wash and pat dry the chicken
- Put the veggies, nuts, garlic and chicken in a big bowl and marinade it with Olive oil, fresh rosemary, lemon, salt, pepper
- Pre-heat oven at 180 degrees for 20 at both Bake and Grill mode (top and bottom coil of oven on)
- Spray some oil on the baking tray and spread your chicken mix.
- Grill and bake for 40 - 50 mins depending on how crispy you want your chicken on the outside.
The chicken in the pic was done for 45 mins.
Wine & Pepper Sauce(Optional)
A simple sauce to go with this is made by adding 2 spoons butter into a pan, followed by half a cup of white wine, 1.5 cups broth (veg or chicken) . Bring it to boil, add salt and lots of pepper , 2 drops of soya sauce (optional) and boil. after 5 mins add corn flour to thicken the sauce. You could also add 1/2 small spoon or tea spoon of sugar to have a slightly sweet taste if you want.
The Chicken cooks beautifully in the marinade and with the juices produced from the veggies and is very very flavorful. 4 of us ate this meal in one sitting without any bread. Only chicken and veggies. Its very healthy and so tasty that people are not able to stop eating this chicken or look up or talk or do anything else. SO .. COOK.. EAT AND ENJOY!
