Zucchini Tomato mint soup
My husband and I have been doing keto diet from a few days. We are excited as we are always thinking of or searching New fun and health recipes. Some recipes you find on people’s blogs or vlogs and some recipes just come to you in your head. This recipe came to me when I saw alll the fresh veggies and herbs in my refrigerator and it hit the nail. It was delicious, and my husband said “ I can eat this everyday”.
What you need to prepare this:
- Clarified butter or Ghee or cooking butter - 2 spoons
- 2 medium sized onions chopped
- 8 cloves garlic
- 1 large or 400 gm zucchini chopped into big cubes(peeled or unpeeled)
- 4 tomatoes chopped
- 1/2 litre of veg or chicken broth
- 2 halves of Bell peppers(optional)
- 2 Bay leaves, 1 black cardamom, Cinnamon powder
- 1/2 cup of of chopped mint leaves
- 1/2 cup spring onion and some coriander leaves to garnish
- Salt and pepper according to taste

How do you make it
- In a big pot, heat oil and add bay leaves and black cardamon and heat for 20 seconds
- Add the onions and garlic. cook them till they become brown and add cinnamon powder
- Add zucchini cubes and cook for 5 mins
- Add salt to enable cooking
- Add tomatoes, bell peppers and mint leaves and cook for another 5 mins
- Add the broth and let it boil and simmer for 20 minutes
- Blend the vegetable mix with a hand blender
- Add more salt and pepper as per taste
- Add the spring onions and coriander
