Mushroom n Spring Bowl
This dish was born out of a calamity. We were 10 of us partying at a friends house and a few of us wanted to cook and eat home food rather than ordering “not so tasty and healthy” food from outside. So we got some chicken, mushroom and other ingredients and midway through cooking the chicken starter the gas cylinder is over and no induction top. We didn’t even start with the mushroom. Oh but people were hungry! So we created this quick microwave mushroom appetiser for our hungry people. And it was so fresh and flavourful that we created another bowl and then another one but this time with carrots.

What goes in?
- Button mushrooms - 200 gms
- Spring onions - bunch of 6
- Garlic ( optional)
- Oregano
- Olive oil - 2 tbsp
- Rosemary
- Salt, pepper and chilli flakes
What you need to do?
- Chop the mushrooms in halves or four pieces. See that the mushroom pieces are chunky
- Chop garlic if you are using garlic
- Chop the spring onions into small pieces
- Put all ingredients in a bowl and olive oil, herbs and salt pepper chilli flakes in a microwaveable bowl
- Mix the ingredients
- Microwave the mushroom bowl for 4 mins.
- Bring it out. Stir the ingredients. Microwave for 4 mins again till most water from mushroom has dried
You could eat this as a starter or eat it with herbed rice(makes for a good meal). Another way you can eat us by topping slice of toasted breads like a Bruschetta.
Alternate Ingredients: You could also make this bowl with Carrots in place of mushroom. The Cook time increases a little. Instead of microwaving for 8 mins you could microwave for 12 mins.
