Veg Manou’she

Mediterranean food is so fresh and simple and full of flavours all the way. They make for good party food as they are easy to pick and not oily or messy. We had a short teen Patti session post Diwali which was a low key affair and focus was mostly on playing. But as usual my group of friends who are foodies like me got hungry midway the game. I had some thin pizza base in my kitchen and thevery delicious “Zatar powder” in my fridge and quickly whipped up this baked Veg Manoushe to be eaten while we played. Hope you enjoy the recipe and make this for some casual gathering or high tea. 

P. S. Zatar powder is not readily available in India but you get it almost everywhere across the globe. So if you have friends coming from Middle East, Australia, Europe, US , do ask them to get a bottle of Zatar powder for you.



What do you need?

  1. Thin crust pizza base or pita bread
  2. Tomatoes
  3. Mushrooms
  4. Fresh basil
  5. Olive oil
  6. Cheese - any processed cheese of your liking ( I used cheese slices as I had that in my fridge)
  7. Zatar spice powder
What you need to do?
  1. Drizzle some olive oil and some Zatar on the base
  2. Cut fresh tomatoes and mushrooms and fresh basil leaves and top it on the base or pita bread
  3. Sprinkle with little salt pepper and Zatar powder 
  4. Add some cheese on top and bake and grill it for 10 mins at 180 degree Celsius ( if you don’t have oven cook it on a flat pan covered with a lid)
  5. Cook till the cheese melts a little
  6. Drizzle some olive oil on top

And you’ve got yourself a very tasty and easy to make Mediterranean dish which m sure you, your family and friends will definitely dig into.
