Sardine masala fry

Sardines is such a flavourful fish. Only challenge is that is has bones, but these bones are easy to separate . And instead of shallow fry if we deep fry the fish we can even eat the crunchy bones. 
I enjoyed this fry with some rice and simple daal with cumin, tomato and curry leave tadka. Don’t forget to dress the fish with some lemon while eating. 




What do we need? 

For marinade:
  1. 500 gm Sardines - gutted and scaled
  2. 2 spoon red chilli powder 
  3. 1 spoon haldi /turmeric
  4. 1/4 spoon pepper powder 
  5. 10 cloves of crushed garlic
Coconut oil to fry

For masala 
  1. 2 to 3 onions finely chopped
  2. 4 sprigs of curry leaf 
  3. Haldi 1/2 spoons
  4. 3 dried red chillies 
What you need to do?

  1. Make small slits on the Sardines and Marinade the fish for 30 mins
  2. In a shallow pan put coconut oil
  3. shallow fry the fish in batches in the oil till it looks crispy and slightly charred from outside ( you could also deep fry if you don’t want the hassle of removing bones as deep frying make sardine bones crispy and one can eat them
  4. Remove all the fish on a tissue to soak excess oil
  5. In the same pan add more oil if needed, add curry leaf and red chillies and Cook for 30 seconds
  6. Now add the onions and cook till slightly brown
  7. Add the fish back to the pan and mix with the onion masala/ or pour the masala on top of the fish fry
BEST EATEN WITH: White rice, yellow simple daal fry, papadam and onions on the side. Put some lemon juice on top of the fish
