Spinach Garlic Pasta
Some days back a close friend was contemplating whether to order food at my house (there was nothing exciting in my fridge) so I told him give me 15 mins and I will cook him a nice pasta. I had never made this pasta recipe but had an intuition that it will be very delicious(now I can say the intuition was correct). My friend was patient enough to let me cook this pasta for him. To his luck I also had a nice bread loaf to make toasted bread. All it took was 15 mins. Not a minute more or a minute less. So this is how I made this.. 
What do you need? (Pasta for 2)
- Pasta of your choice
- Half bunch of thoroughly washed Spinach
- Chopped garlic-6 cloves or 1/2 spoon garlic paste
- Bell pepper -1 or (1/2 of each red /yellow pepper)
- Rosemary
- Oil
- Salt and pepper
- Any processed cheese ( prefer cheddar cheese)
What you need to do?
- Boil water, add some salt and oil to the water and cook you pasta al dente( just about cooked as the pasta cooked when you toss it with the sauce)
- While the pasta cooks , in a pan put some olive oil and garlic (chopped or paste) . Toss in your spinach leaves. Cool for 2 mins and add salt and pepper
- Remove the spinach in a grinder and add 1/2 cup of pasta water( in which pasta is cooking) . Grind this into a coarse paste ( very small pieces of spinach leaves should be visible)
- In the same pan fry the slices bell peppers with rosemary 1/2 tbsp and salt and pepper
- Add the spinach paste and cook the bells with the sauce for 1 minute
- You would have removed your cooked pasta and strained the water out and ran it through cold water.
- Add this pasta to the pan woh sauce and bells and toss it till all pasta is coated woth the green sauce.
- Grate some cheese on tha pasta and cook for a minute till the cheese melts slightly
Yummy and restaurant like pasta is readyaaaaa!!
